Pistachio Oil Pressing Line

Pistachio oil procurement must be based on raw shelled kernels or a clearly defined in-shell feed. Roasted, salted, seasoned, or mixed snack product is not equivalent to raw kernel feed and needs a separate contamination and cleaning review.

Raw Material Boundary

State the variety, origin, shell ratio, moisture, storage history, and intended food or cosmetic use. Remove moldy, insect-damaged, discolored, scorched, or rancid kernels. Where the product standard requires contaminant testing, pressing is not a substitute for representative sampling and laboratory analysis.

  1. Shell the nuts and separate hard shell pieces.
  2. Sort raw kernels and remove defective material.
  3. Measure moisture and dry or temper gently only when necessary.
  4. Crush uniformly while limiting unnecessary air exposure.
  5. Isolate roasted trials from the cold-pressed product route.

Pressing Route and Equipment

Evaluate hydraulic batch cold pressing first for a high-value, light-aroma oil. If a roasted flavor is required, trial it as a separate pretreatment recipe and compare oil color, aroma, filtered clarity, and cake handling. Machine selection must use the valuable kernel input and measured batch record, not nominal in-shell tonnage.

Specify settled or fine-filtered oil, visible sediment, clarity, color, aroma, sampling time, and the package used to limit light and oxygen. Include food-contact materials, product recovery from the line, and cleanability in the purchase specification.

Record shell and rejection weights, kernel moisture, crush size, batch charge, cycle time, oil temperature, crude and filtered oil, cake, and material retained in the machine. Check color, aroma, burnt or rancid notes, clarity after the agreed period, product recovery, and cleaning between valuable lots.
